New Years Chili Honey Soy Chicken

Hey everyone, here is a dish that me and Vibol Duch made during our time up at Whitianga. It was really nice so yeahhhh I decide to do it this week. Really easy to make so give it a go :)

Ingredients :
  • Chicken drumsticks : 10
  • Honey : 3 - 4 tablespoons
  • Soy Sauce : 15 - 20 shakes
  • Dark Soy Sauce : 1 shake
  • Garlic : 3 cloves
  • Chili : 2
  • Coriander : 1 stem
Note: it is totally up to you how sweet, salty or spicy you want the chicken to be. Just make adjustments yaaah =P

Instructions :
  • Defrost and thaw the chicken if frozen (DUH!) lol and place into a mixing bowl
  • Add the honey and mix until it is even
  • Now add the soy sauce and dark soy sauce
  • Cut the garlic into thin slices and add into the mixing bowl
  • Now chop the chili into the slices and add it to the mix, slice however thick you like but I generally do it quite thin
  • Now chop the coriander and add into the mix and Start mixing thoroughly
  • Leave it to sit and preheat the oven on fan bake to 180 degrees
  • Tin foil the oven tray and place the chicken in
  • Do not let the chicken overlap each other, and try to have a little bit of room between each piece for even cooking
  • Now turn the chicken once over when it is has become a golden brown. Usually takes about 15-20 mins. But because is it chicken you can never be to sure lols. Then your done!
Note: Always double check that the chicken is cooked ayyyyy, don't wana get sick and that.

Salted Deep Fried Fish

Sunay, 22nd May 2011 Part 2 Here is a great complimentary dish to go with Ba Bor Sor (white rice porridge). Its salted fish which has a lot of flavour. Ingredients : Fish : 500g Salt : 1.5 teaspoons Sugar : 2.5 teaspoons Sesame Salt : 0.2 teaspoons Oil : As much as you need to deep fry the fish lol Instructions : Prepare the fish such e.g. scaling and cutting the guts out Cut the fish into small portions Place the fish into a bowl, a bowl you can mix the ingredient Add the salt, sugar, and sesame salt into the bowl and MIX thoroughly i mean THOROUGHLY! lol Now you are ready to fry Place oil into a sauce pan or whatever you can use to deep fry Heat to 180C (roughly that temperature if its too hot the oil will explode or something) Lightly place the fish in Cook the fish for about 3-5 minutes each side or to your liking note: don't drink and fry, safety first D: also, drain the fish by placing paper towels into a plate prior to serving. Ba Bor Sor (white rice porridge)

Sunday, 22nd May 2011 Since winter is coming upon us fast, I have decided to learn how to make Ba Bor Sor (white rice porridge). This meal is great for winter and for when you are sick as it warms you up and is easily digested. Ingredients : Rice : 1 cup Water : 6 - 7 cups Salt :   1 teaspoon Extras:  coriander, spring onion, soy sauce Instructions : Put 1 cup of rice into a pot and rinse 2 - 3 times Add 6 - 7 cups of water into the pot Add 1 teaspoon of salt into the pot Place pot on the element and bring to a boil Turn down the element and let it boil softly while having the pot lid half off  Let it boil softly until rice becomes fluffy Remove top layer of starch regularly through out the boil notes: for a more or less watery meal just simply put in more or less water accordingly.
